Fuego on the 51st floor: A Sushisamba x Girl & The Goose collab
This might be the biggest Latin fusion team-up since Bad Bunny and J Balvin jumped on La Canción… There is such a thing as collaboration fatigue. Remember a few years ago, at the peak of ‘X’ culture, when brands were lining up to dance together like it was the final song at senior prom. Rubber […]

There is such a thing as collaboration fatigue. Remember a few years ago, at the peak of ‘X’ culture, when brands were lining up to dance together like it was the final song at senior prom. Rubber shoe manufacturers were courting fried chicken magnates (a real thing, Google it), high fashion houses had dalliances with kitchen appliance brands. It all got a bit much. Thankfully, the collab clamour has calmed somewhat in 2026. We’re at a place now where the team-ups seem more authentic, more deliberate, better matched and mutually enhancing, just more… En sintonía. Collaborations like the Sushisamba x Girl & The Goose one night only, gastronomic gallivant headed to the 51st floor of The St. Regis Dubai, The Palm. Taking place on October 21 – the menu will feature dishes conceived in a (stick with the metaphor) large kitchen collider, smashing together the principal culinary particles of Chef Gabriela Chamorro of Girl & The Goose and Chef Kyung Soo Moon of Sushisamba (and Hanu, Attiko, etc). It’s a fiery entanglement featuring exquisite Centroamericano flavoursmithery, courtesy of Chef Gabriela (and What’s On Chef Of The Year 2026 ), who’s bringing her poetic, soul-driven talent to Sushisamba’s iconic Palm penthouse. The result – a thunderous union of Nikkei and Nicaraguan cuisine, of flame and fancy, of zest and zoological decor. And we cannot wait. The special event is available to book now on the Sushisamba website, and from what we can tell the pricing structure looks to be uniquely available via an à la carte format. The menu will include highlights such as yellowtail aguachile ceviche (Dhs99), A5 Wagyu tataki (Dhs129), grilled sweet prawns (Dhs169), miso black cod (Dhs175), and Caribbean coconut flan (Dhs51).
